Top chef returns to Nuneaton College

North Warwickshire & Hinckley Collge Hospitality and Catering Department welcomed ex-student Ryan Shilton last week for a special guest chef evening.

Ryan visited the College’s onsite Glebegate restaurant to serve up a tasting menu to more than 50 guests.

During the evening, current students had the opportunity to work with Ryan and help to create a number of his dishes including aged lamb rump with roscoff onion, mint sauce and goat’s curd and rhubarb and muscavado cheesecake with stem ginger.

Ryan was a Hospitality and Catering student at the College in 2008 completing his studies in 2011. Ryan went on to do a stage at Daniel Clifford’s 2 Michelin-starred Midsummer House Restaurant in Cambridge, and also spent some time at 1 Michelin starred Hampton Manor. Then in March 2016 he became Head Chef at 3 AA Rosette Swinfen Hall Hotel.

Ryan said: “It’s brilliant and exciting to come back to North Warwickshire and Hinckley College to see how the next generation of chefs are getting on. Hopefully with a couple of days there I’ll be able to give an insight into the high standards and level they aspire to reach.”
